Barbecuing or grilling is an art.  Knowing when to turn the meat or poultry and knowing when it is cooked is the whole art of grilling.  There are two types of grilling—direct and indirect.  Barbecue grilling is considered indirect because it involves slowly cooking the meat for a long period of time using the heat coming from smoldering wood chips or logs.  The best temperature range for barbequing is between 200º and 300º F. If the temperature goes beyond 300º F, it is now considered direct grilling.

The method of grilling depends wholly on the range of temperature you’re using.  The temperature of the grill may be classified into three categories—low, medium and high.

Low temperature (below 300 °F) is best used to bbq large meats such as prime ribs and roasts.  Barbecuing at low temperatures is ideal for meats which are high in fat. But expert grillers advise against grilling below 225º F.

Medium temperature (300 °F to 400 °F) is best used for most meats including hot dogs, beef franks, chicken and hamburgers.

High temperature (above 400 °F) is best for quick grilling and searing the meats.  You may not always use a very high temperature when grilling or barbecuing.  People normally put the meat on hot for a few seconds or minutes, just enough to sear the meat beautifully, then they lower the temperature to cook the meat to its desired doneness.  This method of grilling seals in the juices of the meat.  It also caramelizes the outside of the meat giving it a grilled taste.

Before you even buy a grill, you need to decide between a gas and charcoal grill.  A gas grill has the obvious benefit of convenience.  When you want to use it, you just basically turn the knob and adjust the heat settings to your preference.  It’s that easy, clean and fast.   Gas grills are powered by liquid propane or a gas tank so there is no dirty briquettes, no lighting, no offensive smelling starter fluid and definitely no waiting time for the coals to ignite and glow.  Gas grills are definitely easy to use, heat and efficiently, have temperature controls, and are relatively easy to clean.  Once meal is over, there is no mess to clean up and definitely no ashes.  Just turn the knob to off and rub a tool brush on the grate for easy cleaning.  And you’re done.  Gas grills can be used all year round.

Charcoal grill does not offer the same convenience as gas, but it does have one quality that a gas grill can never have—smoky flavor.  This benefit stands out among the rest.  And for purists, it is enough reason to go for charcoal.  Of course, charcoal grill entails more time to set up, from stacking and igniting the briquettes to getting the coals smoldering hot and keeping the flame.   Unlike with a gas grill where you control the heat, you have to rely on creating empty spaces.   This allows you to control the grilling, from placing the meat over hot charcoal and searing it and transferring to less hot parts of the grill to finish the grilling.  It is truly hard work when it comes to a charcoal grill and the griller should have the needed experience to manage this type of grill.

On the other hand, gas barbeques and grills much cleaner, but it doesn’t give much flavor to grilled foods like what a charcoal grill gives.  Charcoal grills are also cheaper than gas grill. Although you have to buy charcoal every time you grill, it’s still less expensive compared to the electricity you use for the gas grill.   Charcoal grill is also more portable than gas grills. Just load a bag of charcoal onto the trunk and you’re ready to go whether to the beach or the park.

In the end, it’s really up to you. If you’re looking for convenience and easy clean up then choose the gas grill.  But if you want to have that smoky flavor with your grills and barbeques all the time, go for the charcoal grill.  In any case, you will need barbeque accessories to enjoy and have fun in grilling.  Kebab skewers, basting brushes, wood or smoke planks, sprayers, roasting racks, even lighters, tongs and mitts, these are just some of the tools needed for a great barbecue. Garden Pests

Nearly every garden has tough spots, where the sun does not shine, shines too much or the drainage is poor.  And nearly every garden has pests that have turned your garden into their home.  Instead of spraying those pests with toxic death, why not deal with them naturally?  Here are some tips you can use to get rid of them:

ANTS: A favorite place for an ants’ nest is the rich earth around big plants housed in earthenware pots.  To eliminate this, you can either flood the pot with boiling water which is the usual advice but has its downside.  This process will kill the ants but may also kill the plant’s roots.  The better method is to get a big bucket and fill it loosely with a mixture of soil and compost.  Place it next to the infested one.  Balance a stick across the rims of both thus creating a bridge for both pots.  Slowly flood the infested pot with cold water.  It won’t take long before the ants cross the bridge.
